Ingredients:
1 cup old fashioned oats
1 tablespoon flax meal
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
a pinch of clove
1/4 teaspoon salt
a pinch of baking soda
1/4 teaspoon baking powder
1/4 cup applesauce
1-1/2 tablespoon molasses
1/2 cup almond milk
2 tablespoons coconut oil
1 teaspoon vanilla
1/4 teaspoon maple extract
1 small apple, peeled, cored, and grated
1 tablespoon dried cranberries
Toss the oats, cinnamon, nutmeg, ginger, clove, salt, baking soda, and baking powder together. Add the applesauce, molasses, milk, oil, vanilla and maple. Fold in the apples and cranberries.
Pour the batter into a casserole dish. If there is extra apple, slice and arrange on top.
Bake for 30-40 minutes at 350. Allow to cool for 5 minutes before cutting.
