Ingredients:
1 tablespoon butter
1 cup uncooked rice
1-1/2 cup vegetable stock
1 tablespoon lemon juice
1 teaspoon lemon zest
1 tablespoon thyme
Melt butter and stir in rice. Cook until browned about 5 minutes. Add the remaining ingredients, cover, and cook for about 20 minutes until all the liquid is absorbed.
