Greek Style Penne

Ingredients

2 cups whole wheat penne
1 cup zucchini slices
1 cup vegan cream
1/3 cup ripe olives, pitted and sliced
1-1/2 teaspoon oregano
1/4 teaspoon black pepper
4 ounces vegan feta
1/4 cup fresh basil leaves
1 cup tomatoes, chopped

Cook pasta. Add zucchini to pasta during the last two minutes of boiling. Drain and return to pan. Add remaining ingredients except basil and tomatoes. Cook until heated through. Remove from heat and stir in tomato and basil.
