Ingredients:
2 cups peas
1/2 cup coconut milk
1/2 cup vegetable stock
1 small shallot
zest and juice of 1 lime
1 stalk of lemongrass
1/2 chili pepper
1/2 inch ginger
a pinch of red pepper flakes
1/2 cup cilantro
salt, to taste
Combine all the ingredients in a blender and puree until smooth. Serve cold garnished with more coconut milk and red pepper flakes.
