Iraqi Red Rice

Ingredients:

1/2 onion, finely chopped
1 teaspoon oil
1 cup rice
2-3 tablespoons tomato paste
1/4 teaspoon cinnamon
1/2 teaspoon cumin
salt and black pepper, to taste
1/2 teaspoon dried lemon powder (optional)


Cook onion in half the oil until soft. Add rice, remaining oil, and water. Cover and cook until almost tender. Stir in remaining ingredients. Cook until tender.
