Ful Nabed

Ingredients:

grapeseed oil
1 small onion, chopped
2 cloves garlic, minced
1-1/2 teaspoons cumin seed
1-1/2 teaspoons paprika
1/4 teaspoon aleppo pepper
2 bay leaves
2 carrots, chopped
1-1/2 cups tomatoes, chopped
4 cups vegetable stock
2 cups fava beans
1/4 cup parsley, chopped
juice of half a small lemon
salt and pepper, to taste
fresh mint leaves (optional)

Cook onion in oil until tender and add garlic.

Add cumin, paprika, aleppo pepper, bay leaves, and carrots. Cook until carrots are slightly tender.

Stir in tomatoes and stock. Bring to a simmer, cover, and cook for 15 minutes.

Add beans and lemon juice. Season with salt and pepper.

Remove from heat and stir in parsley.

Garnish with mint leaves.
