Ingredients:
1 cup chickpea flour
2 cups warm water
1 teaspoon salt
4-1/2 tablespoons oil
Whisk together chickpea flour and water. Let batter stand 2 hours at room temperature. Skim off any foam. Add oil and salt.
Bake in 12 inch well greased pan at 500 degrees for about 20 minutes.
Mix in options:
* 1 teaspoon chopped rosemary
* 1 tablespoon chopped thyme
* 1 teaspoon sage
Topping options:
* sliced cherry tomatoes
* caramelized onions
* nicoise olives
* thinly sliced zucchini
