Citrus Pomegranate Chicken

Ingredients:

2 tablespoons oil
1 medium onion, chopped
1 clove garlic, minced
2 teaspoons cumin
1 teaspoon garam masala
2 tablespoons flour
1/2 cup water
1-3/4 cup vegetable stock
1/2 cup dried apricots, halved
1 tablespoon lemon zest
2 teaspoons ginger, minced
1 package vegan chicken strips
1 cup pomegranate arils

Saute onion and garlic in oil. Add cumin and garam masala. Stir in the flour and then the water. Then add the vegetable stock, apricots, lemon zest, and ginger. Add vegan chicken and simmer.

Serve over couscous and top with pomegranate arils.
