Vegan Jamaican Meat Pie

Ingredients:

2 cups AP flour
1 tablespoon sugar
1 teaspoon salt
1 teaspoon turmeric
5 ounces coconut oil
1/2 tablespoon apple cider vinegar
1/2 cup water

1 teaspoon coconut oil
1/2 cup onion, chopped
1/2 scotch bonnet or habanero pepper, seeded and minced
2 cloves garlic, minced
1/2 red bell pepper, finely chopped (optional)
1/2 teaspoon paprika
1/2 teaspoon smoked paprika
1/2 teaspoon allspice
1 teaspoon curry powder
1 teaspoon thyme
1 teaspoon white pepper
1/2 teaspoon chili pepper
1 package vegan ground beef
1/4-1/3 cup vegetable stock
salt, to taste
2 green onions, chopped
2 tablespoons parsley, chopped
1/4 cup breadcrumbs or panko

Combine dough ingredients. Cover and allow to rest for 30 minutes.

Meanwhile, cook the onion, pepper, garlic, and red bell pepper in the oil. Add the spices and add the meat, stock, and salt. Remove from heat and stir in the green onion, parsley, and breadcrumbs.

Divide dough into 4 or 8 pieces and flatten with a rolling pin. Divide the filling between the dough and seal.

Bake at 375 for 30 minutes.
