Lentil Salad with Dried Lemon

Ingredients:

1 cup brown lentils, soaked
1 dried lime, pierced with a fork
1/2 red onion, diced
1 pint cherry tomatoes, halved
1/2 red bell pepper, finely chopped (optional)
1 bunch parsley, chopped
2 tablespoons olive oil
juice of 1 small lime
1/2 tablespoon dried lemon powder
salt and black pepper, to taste

Cook the lentils with the dried lime and drain. Remove the dried lemon. Set aside to cool then combine with all remaining ingredients.
