Zucchini Bread

Ingredients:

2-1/4 cup flour
3/4 cup sugar
1/2 cup dark brown sugar
3/4 teaspoon baking soda
3/4 teaspoon baking powder
2 teaspoons cinnamon spice mix
1-1/2 cup applesauce
3/4 cup vegetable or coconut oil
2 teaspoons vanilla
2 cups zucchini, grated
2 teaspoons apple cider vinegar

Combine dry ingredients and add the wet ingredients. Fold in the zucchini and apple cider vinegar and transfer to a greased or lined loaf pan.

Bake 40 to 60 minutes at 325 degrees.
