Tomato Soup

Ingredients:

3 cloves garlic, minced
1/2 large onion, finely chopped
1 bay leaf
2 tablespoons butter
a pinch of red chili flakes
1 can diced tomatoes in juice
1/4 cup tomato puree
1 cup vegetable stock
1/4 cup cream
salt and black pepper, to taste
2 tablespoons basil, chopped

Cook the bay leaf, garlic, and onion in the butter until translucent and add the chili flakes. Then add the tomatoes, puree and stock and bring to simmer. Stir in the cream and season with salt and pepper. Add the basil just before removing from heat and remove the bay leaf

Garnish with more basil and vegan parmesan.
