Ingredients:
1 tablespoon peanut oil
1 red onion, chopped
2 cloves garlic, minced
2 tablespoons tomato paste
2 tablespoons peanut butter
1 large sweet potato, cut into half inch cubes
2 roma tomatoes, chopped
1 red bell pepper, chopped
1 red chili pepper, minced
1/2 small green cabbage, cut into wedges
1 carrot, chopped (optional)
6 okra, sliced (optional)
2/3 cup brown beans (optional)
2 cups vegetable stock
cayenne pepper
salt
1/2 small lime
2 tablespoons cilantro, chopped
Cook onion and garlic in the oil. Add the bell pepper, then add the stock, tomato paste, tomatoes, carrot, sweet potato, and chili pepper. Bring to a simmer, cover, cover, and continue to simmer until potatoes are tender.
Whisk in peanut butter. Then add okra, beans, and cabbage wedges. Cook until crisp tender. Season with cayenne pepper and salt. Squeeze lime juice into it just before removing from heat.
Garnish with cilantro and a wedge of lime.
