Balsamic Mushroom Pasta

Ingredients:

4 ounces fettuccine or linguine
2 tablespoons butter
1 tablespoon olive oil
1/4 cup shallot, minced
2 garlic cloves, minced
12 ounces cremini mushrooms, sliced
1/4 cup balsamic vinegar
1/4 cup cream
1/4 cup grated parmesan
2 tablespoons parsley, minced
salt and pepper

Cook pasta according to instructions. Set aside.

Melt half the oil in a skillet and add the shallot and garlic. Cook until translucent. Add the mushrooms and cook until wilted. Stir in the balsamic vinegar and allow to reduce.

Add cream and parmesan. Allow cheese to melt and add the pasta. When heated through, season with salt and pepper. Remove from heat and stir in the parsley.
