Ingredients:
1 carrot, sliced with a mandolin
4 red radishes, sliced with a mandolin
daikon radish thinly sliced
1 cucumber, diagonally sliced
1 avocado, sliced
2 tablespoons rice vinegar
2 teaspoons sugar
1/2 teaspoon ginger, minced
2 teaspoons soy sauce
1 teaspoon sesame oil
juice of 1 lime
1 teaspoon sesame seeds, toasted
1 teaspoon black sesame seeds, toasted
1 tablespoon toasted pumpkin seeds
1 green onion, thinly sliced
1 ounce seaweed (nori) strips, toasted
Arrange carrot, radishes, cucumber, and avocado on a plate.
Combine dressing ingredients and drizzle over the veggies. Sprinkle with sesame seeds, pumpkin seeds, green onion, and nori.
