Palm Heart Ceviche

Ingredients:

20 ounces palm hearts, sliced
2 tomatoes, chopped
1 small red onion, chopped
2 jalapenos, minced
1 small orange bell pepper, finely chopped
1 small yellow bell pepper, finely chopped
1 cucumber, chopped
1/2 cup cilantro, chopped
1 avocado, diced
juice of 2 limes
salt and black pepper
tortilla chips

Toss all vegetables together with lime juice, salt, and pepper. Serve in bowls or glasses and garnish with tortilla chips and more lime, if desired.
