Bibingka

Ingredients:

8 ounces cream cheese
2 cups sugar
3 eggs
1 pound (3-1/2 cups) rice flour
1 tablespoon baking powder
1/2 cup butter, room temperature
1 teaspoon vanilla
1 cup pineapple, cut into 1 cm cubes
15 ounces cream of coconut
1 cup milk
1/4 cup brown sugar
2 tablespoons sugar

Beat the sugar and cream cheese. Add eggs one at a time.

Mix in remaining ingredients, alternating flour with milk.

Pour mixture into greased pan and sprinkle sugar and brown sugar on top.

Bake at 350 for 1 hour. Allow to cool completely before cutting to serve.
