Ingredients:
1 tablespoon ginger, minced
2 tablespoons honey
1 tablespoon vinegar
juice of 1 lime
1 small clove garlic, minced
2 tablespoons olive oil
salt and pepper
quinoa, cooked and cooled
1/4 cup cashews
1/4 cup dried apricots, slivered
1/3 cup dried cherries, halved
1/4 cup red onion, sliced
1 head lettuce, chopped or torn
Combine all dressing ingredients in a bowl and whisk.
Toss all salad ingredients together. Combine with dressing before serving.
