Ingredients:
2 tablespoons oil
1 onion, chopped
3 cloves garlic, minced
2 tablespoons ginger, minced
1/2 teaspoon chili powder
1 teaspoon turmeric
2 tomatoes, chopped

chopped frozen spinach
chickpeas
salt, to taste
Cook onion, garlic, and ginger in the oil. Add the seasonings followed by tomatoes. When tomatoes simmer, add the spinach and chickpeas. Cover and cook for 10 minutes. Season with salt.
Serve with brown rice and plantains or yam.

Patod ki Sabzi
Ingredients:
1 cup chickpea flour
2 garlic cloves, minced
1 teaspoon chili powder
1/2 teaspoon chaat masala
1/2 teaspoon sugar
1/2 teaspoon salt
2 cups water
1 teaspoon coconut oil
1/2 onion, finely chopped
2 cloves garlic, minced
1/2 inch ginger, minced
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon coriander
1/2 teaspoon turmeric
1/2 teaspoon agave
salt, to taste
1 package spinach blended with some water
1/2 teaspoon garam masala
1/3 cup vegan yogurt or cashew cream
1/3 cup almonds, soaked and blended with some water
Combine chickpea flour and remaining dry ingredients. Gradually whisk in the water and set aside for a few hours. Pour the mixture in a nonstick pan and stir constantly on meduim heat until the mixture thickens. Press the mixture into an oiled plate and allow to cool. Cut into diamonds and fry with coconut or mustard oil until golden on both sides. Set aside.
Cook the onion and coconut oil in a skillet and add the ginger and garlic, followed by the spices. Stir until aromatic and add the spinach and garam masala. Bring to a simmer and add the yogurt and almond. Season with more salt as needed and stir in the chickpea patod.
Garnish with cilantro, if desired and serve with naan, chapati, red rice, or millet.

3 teaspoons soy sauce or teriyaki sauce
1 tablespoon sesame seeds, toasted
1 teaspoon sesame oil
Cook the garlic in the the oil. Add the spinach and cook until wilted. Add the tofu and soy sauce. Remove from heat and stir in sesame seeds and sesame oil.

Spaghetti with Spinach and Pea Pesto
Ingredients:

2 tablespoons pine nuts
1/4 cup walnuts
1/4 cup olive oil
2 cloves garlic
salt and black pepper, to taste
2 tablespoons fresh basil, chopped
1 tablespoon pine nuts, toasted
Cook the spaghetti in salted water. Strain the pasta, reserving its water, and set aside.
Cook the peas and the spinach in the reserved water and transfer to a food processor along with the remaining ingredients. Pulse until ingredients are finely chopped. Stir the pesto into hot pasta. Garnish with basil and pine nuts.

1 green chile, minced

1-2 teaspoons curry powder
1 teaspoon cumin
1 teaspoon turmeric
1 medium potato, peeled and diced
4 cups vegetable stock
1 large zucchini, diced
1 bag baby spinach
1 cup coconut milk
salt and black pepper, to taste
In a saucepan, cook the leek in the oil and add the chile and garlic, followed by the curry, cumin, and turmeric. Add the potatoes and stock. Cover and simmer for 10 minutes, then add the zucchini. Simmer until the potato and zucchini are cooked and add the spinach. When the spinach is wilted, pour the mixture into a blender with the coconut milk and puree until smooth. Transfer the soup back to the saucepan and season with salt and pepper.
Serve with garlic croutons and a drizzle of coconut milk.

2 teaspoons honey or maple syrup
2 teaspoons teriyaki sauce
1/2 teaspoon ginger, minced

juice of 1 small lime
1/2 tablespoon soy sauce
1 teaspoon tamarind sauce
1/2 teaspoon crushed red pepper
4 cups baby spinach
1-1/2 cup quinoa
1 red bell pepper, diced
1/4 cup cilantro, roughly chopped
1 avocado sliced or diced

1-1/2 cup peas
1 package baby spinach
2 tablespoons olive oil
2 tablespoons pesto sauce
juice of half a lemon
vegan parmesan
Cook the pasta to al dente, adding the peas during the last two minutes, rinse, and set aside.
Meanwhile, pulse the spinach in a food processor until fine. Squeeze liquid out and transfer to bowl along with olive oil, pesto, and lemon. Stir in the pasta and peas. Garnish with the vegan parmesan. Serve at room temperature.

phyllo dough, 2-3 inch long rectangles
olive oil
sesame seeds
Prepare flax egg and stir in the spinach, cashew cream, cheeses, oregano, nutmeg, salt, pepper, dill and green onion. Set aside.
Brush sheet of dough with olive oil and layer with a second sheet. Brush the second sheet and place the spinach mixture inside on the edge. Roll the dough up and place on a baking sheet with the seam on the bottom. Repeat. Brush each cigar with more olive oil and sprinkle with the sesame seeds.
Bake at 400 for 20 minutes or until golden brown and crispy.

2 roma tomatoes, diced

Place pita on parchment paper and spread with the pesto. Top with a generous portion of the spinach, tomatoes, mushrooms, and cheeses. Sprinkle with the black pepper.
Broil for 10 minutes until bread is golden and spinach is wilted. Drizzle with the olive oil and cut into quarters before serving.

1 onion, chopped

1 teaspoon aleppo pepper
2 teaspoons cumin

2 roma tomatoes, diced
1-1/2 cup red lentils
3-4 cups vegetable stock
baby spinach
salt and black pepper, to taste
1 lemon, cut onto wedges
1/2 cup greek yogurt
1 teaspoon garlic powder
1/2 tablespoon olive oil

1 cup hummus (optional)
3 ounces vegan feta cheese, crumbled
Cook onion in the oil and add the seasonings. Add the spinach a little at a time and cook until wilted. Set aside.
Roll out puff pastry. Spread hummus and sprinkle the feta cheese. Squeeze liquid out of the spinach mixture and spread a generous amount of spinach on top. Roll the pastry and place onto a flat plate seam side down. Place in the freezer until slightly firm.
Cut the pastry into 2 inch slices and place on parchment lined baking sheet. Cook at 375 for 30 minutes or until golden.

1/2 teaspoon cumin
1/2 teaspoon mustard seeds

1/2 teaspoon turmeric
1/2 cup coconut, grated
2 cloves garlic, minced
1/2 onion, chopped
2 tablespoons tamarind
2/3 cup black eyed peas, presoaked
3 cups spinach
salt
Cook red chilies, coriander, cumin, mustard seed,, black pepper, and turmeric in the oil until aromatic. Add the coconut, garlic, and onion. Stir until onions are softened. If desired (for a smoother sauce) puree this mixture with a bit of water and return to the pan. Add tamarind, black eyed peas, and more water. Simmer until beans are tender and add the spinach. Season with salt.
Garnish with fried onion if desired and serve with basmati rice, roti, or naan.

4 ounces mozzarella
1 ounce parmesan
2 cloves garlic, minced
1 teaspoon oregano
red pepper, to taste
1/2 recipe pizza dough
Combine spinach, cheeses, and seasonings.
Divide dough into two pieces and roll into circles. Divide spinach mixture between both pieces of dough and fold dough over the filling. Press edges together to seal. Cut slits into the top.
Bake 20 minutes on baking stone or until edges are golden.

1 serrano chili, seeded

lemon wedges
Blanch the spinach for 1 minute and place on ice. Drain the spinach and add to a food processor with ginger, garlic, and serrano pepper. Puree the mixture and set aside.
Heat the oil and add cumin and bay leaf. Add the onions and cook until golden, then add tomatoes. When the tomato softens, stir in turmeric, chili powder, and coriander and cook until aromatic.

1/4 cup dried cranberries
3 mandarin oranges or clementine, peeled and parted into sections
1/4 cup parsley, chopped
2 green onions, chopped
2 tablespoons sesame seeds
1/4 cup honey roasted peanuts
4 ounces baby spinach
1-1/2 tablespoon teriyaki sauce
1 tablespoon rice vinegar
salt and white pepper, to taste
Combine all ingredients. Toss in dressing. Garnish with won ton strips if desired.
*Variation: use trader joes "sesame soy ginger vinaigrette" instead of the teriyaki dressing recipe.

If spinach is fresh, blanch in boiling water for 1 minute. Cook pasta in reserved water. If using frozen, allow to thaw and squeeze out liquid.
Place garlic in food processor and mince. Add spinach, cream, and milk. Process until blended. Add parmesan and seasonings. Toss with pasta and red peppers.
