Ingredients:
1 large zucchini, sliced lengthwise
salt and black pepper, to taste
1 teaspoon olive oil
1 roma tomato, sliced
1/4 cup red onion, thinly sliced
3 leaves kale, roughly chopped
smoked gouda slices
1/3 cup hummus
flatbread
Brush zucchini with oil, salt, and pepper and grill or roast until crisp tender.
Assemble sandwiches by thinly spreading hummus on each bread, followed by cheese, kale, red onion, tomato, and the grilled zucchini. Wrap tightly.
