Roasted Winter Vegetables

Ingredients:

leek, sliced
parsnip, peeled and chopped
carrots, peeled and sliced or baby carrots
small red potatoes, cut in quarters
sweet potato, peeled and chopped
brussels sprouts, halved
zucchini, sliced
mushrooms (optional)
cannelini beans
olive oil
garlic powder
salt and pepper, ground coarse
thyme
sage
rosemary

Toss all the vegetables with oil, garlic powder, salt, pepper, and herbs. Bake at 350 for 30 minutes. Add cannelini beans and mushrooms. Bake an additional 10 minutes.
