Turkish Potato Salad

Ingredients:

2 yellow potatoes, cut into small cubes
2 tablespoons red onion, finely chopped
2 green onions, chopped
1/3 cup parsley, chopped
1/3 cup cilantro, chopped
1/4  cup dill, chopped
1/4 cup mint, chopped
2 banana peppers, finely chopped
2 cucumbers, cut into quarter rounds
1/2 teaspoon crushed red pepper
1 teaspoon paprika
1 teaspoon sumac
1/2 teaspoon black pepper
2 tablespoons olive oil
juice of 1/2 large lemon
salt

Boil the potatoes and add salt halfway through cooking. Allow to cool before tossing with remaining ingredients.
