Vietnamese Rice Noodle Salad

Ingredients:

2 cloves garlic, minced
2 tablespoons honey
juice of 1 lime
2 tablespoons soy sauce
6 ounces rice noodles
1 carrot, julienned
1 cucumber, chopped finely
1 serrano pepper, minced
2 tablespoons mint, chopped
1/2 cup cilantro, chopped
1 cup white cabbage, thinly sliced
1/4 cup roasted peanuts

Combine garlic, honey, lime, and soy sauce. Set aside.

Cook noodles until al dente. Rinse and set aside to cool.

Combine remaining ingredients and toss with the noodles and the dressing.
