Ingredients:
Kale, stems removed
1 clove garlic, minced
1 teaspoon salt
juice of 1 lemon
olive oil
1 avocado, diced
1/4 cup dried (or fresh) cranberries
1/4 cup pumpkin seeds
1/4 cup roasted slivered almonds (optional)
Toss kale with garlic, olive oil, lemon, salt, and avocado. Top with cranberries, pumpkin seeds, and nuts.
