Coffee and Walnut Cake

 Ingredients:

200 grams butter
300 grams light brown sugar
200 grams yogurt
1/2 plus 1/3 cup milk
400 grams flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons espresso powder
125 grams walnuts, roughly broken
1 teaspoon vinegar

3/4 cup butter
2 teaspoons espresso powder
1 teaspoon milk
2 cups powdered sugar
2 teaspoons vanilla bean paste
walnuts


Cream butter and sugar together. Add the  yogurt and alternately add the flour and milk, baking powder, baking soda, and salt. Add the espresso, walnuts, and vinegar and fold until well incorporated. Transfer to a baking dish and set aside for 10 minutes to rise before baking at 350 for 25-35 minutes.

Meanwhile, combine frosting ingredients, adding more milk to reach desired consistency. Frost the cooled cake and garnish with the walnuts.

Banoffee Pie

Ingredients:

100 grams coconut oil or vegan butter
300 grams biscoff crackers, finely crushed
400 grams coconut milk or cream
100 grams brown sugar
2 teaspoons vanilla
q tablespoon arrowroot starch slurry
2 bananas, sliced
coconut cream
2 tablespoons confectioners sugar
1 teaspoon vanilla
grated chocolate or cacao nibs

Combine oil with cracker crumbs and press into a 9 inch round pie pan. Set aside.

Boil coconut cream with the brown sugar for half an hour. Stir in vanilla and arrowroot powder. Remove from heat and allow to cool for a few minutes.

Pour filling into crust and refrigerate overnight.

Whip the coconut cream and sprinkle in the confectioners sugar. Add the vanilla. Cover the pie with the cream. Sprinkle with chocolate.

Jammie Dodgers

Ingredients:

3/4 cup all purpose flour
1/4 cup almond meal
1/4 cup sugar
1/4 teaspoon salt
1/4 teaspoon baking powder
1/3 cup vegan butter or refined coconut oil
3 tablespoons almond milk
1 teaspoon vanilla
a few drops of almond extract
1/2 cup strawberry jam

Combine flour, almond meal, sugar, salt, and baking powder in a bowl and stir in the butter, almond milk, vanilla, and almond extract.

Refrigerate dough for 10 minutes and roll out dough into about 1/4 inch. Cut with round cookie cutter and place on baking sheet.

For half the cookies, use a smaller cookie cutter to punch out a small circle in the center.

Bake the cookies at 350 for about 10 minutes, until golden then set aside to cool.

Spread some jam on the bottom pieces of cookie and sandwich with the other cookies, pressing lightly.

Keep refrigerated.
