Asparagus Salad

Ingredients:

asparagus spears, cut into 1 inch pieces
1 teaspoon grapeseed oil
2 cloves garlic, minced
1 teaspoon caraway seeds
1 cup cooked black eyed peas
baby spinach
1 avocado, diced
1/4 cup almonds, toasted and chopped
zest of 1/2 lemon
juice of 1 lemon
2 tablespoons olive oil
salt and black pepper, to taste

Saute the asparagus in grapeseed oil and add the garlic and caraway seeds. Set aside to cool.

Toss the asparagus with remaining ingredients and serve immediately.
