Pineapple Upside Down Cake

Ingredients:

1 cup light brown sugar
6 tablespoons vegan butter
1 teaspoon salt
1/2 teaspoon rum flavoring
1/2 cup sliced almonds
5 rings pineapple
1-1/3 cup cake flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1 teaspoon salt
2 tablespoons applesauce
1 flax egg
2 teaspoons vanilla
3/4 cup sugar
1/2 cup coconut oil
1 cup vegan cream
1 tablespoon apple cider vinegar

In a saucepan, melt the sugar and add the butter, salt, and rum flavor. Stir until caramelized.

Lay pineapple rings on the surface of a 10 inch pan and sprinkle with the almonds. Pour the caramel sauce over.

Combine the remaining cake ingredients and pour over the caramel.

Bake at 350 for 50 minutes. Allow to cool 30 minutes before inverting. Serve room temperature.
