Zucchini Couscous Salad

Ingredients:

1 zucchini, diced
1 yellow zucchini, diced
1 red bell pepper, diced
1/4 red onion, thinly sliced
1 cup chickpeas
1 cup israeli couscous, cooked
juice of 1 lemon
2 tablespoons olive oil
2 tablespoons zaatar
salt and black pepper, to taste

Grill or roast the zucchinis, bell pepper, and onion.

Meanwhile, toss the chickpeas with the couscous and allow to chill.

Whisk the lemon juice, olive oil, zatar, salt and pepper together.

When the vegetables are cooled, toss with the couscous and dressing.
