Ingredients:
5 cups water
1-2 lemongrass stalks, thinly sliced
1/3 cup hibiscus
20 basil leaves, roughly chopped
1/4 cup honey or agave
juice of 2 limes
Boil the water and add the lemongrass, hibiscus, and basil. Remove from heat and allow to steep for half an hour.
Strain the tea into a pitcher and stir in sweetening agent. When it cools, add the lime juice and adjust sweetness.
Serve over ice and garnish with lime slices and basil leaves.

Chamomile Peach Iced Tea
Ingredients:
2 cups water
2 tablespoons chamomile
3 tablespoons agave or honey
1 large peach, peeled (more for garnish, if desired)
2 cups ice
Boil half the water and steep the chamomile. Stir the sweetener into the tea and allow to cool.
Blend the tea with the remaining water and the peach.
Pour the tea over ice and garnish with peach slices to serve.

Thai Tea with Boba
Ingredients:
1/2 cup ceylon tea leaves
2 tablespoons tamarind
2-3 star anise
1 clove (optional)
1/2 teaspoon vanilla bean paste
cardamom, crushed
orange blossom water
1/4 cup condensed milk
1/4 cup evaporated milk
1 cup large tapioca pearls
1/2 cup brown sugar or molasses
1/2 cup honey
Prepare sugar syrup by simmering brown sugar and honey in water. Set aside and allow to slightly cool.
Seep tea, tamarind, star anise, vanilla, cardamom, clove, and orange blossom water in 2 cups of hot water.
Cook tapioca pearls as per package instructions.
When tapioca are done cooking, immediately place in sugar syrup.
Mix the evaporated milk with the condensed milk.
To serve, spoon a generous amount of the tapioca into each glass, topping with ice. Pour tea over ice until about 2/3 full and finish with milk mixture.

Green Tea Lime Coolers
Ingredients:
3 cups water
1 green tea bag
1 jasmine green tea bag
3 tablespoons honey
3 mint leaves (optional)
juice of 1 lime
ice
1 tablespoon chia seeds (optional)
Boil water and measure three cups into small pitcher. Seep tea bags in the water for 10 minutes. Add honey, mint leaves, and lime juice and refrigerate. Serve with a handful of ice and chia seeds.
