Ingredients:
3 stalks celery, thinly sliced with mandolin
1 cup celery leaves
1 granny smith apple, thinly sliced
1 tablespoon mustard seed, crushed with mortar and pestle
1 tablespoon apple cider vinegar
1 tablespoon apple juice
2 tablespoons olive oil
salt and black pepper, to taste
Toss all ingredients together or arrange them on a plate and serve cold.
