Ingredients:
1 package soba noodles, cooked, drained, and tossed in sesame oil
1/2 lb green beans, cut into 1 inch pieces and blanched
cucumber, chopped
cherry tomatoes, cut in half
2 green onions, thinly sliced
cilantro, chopped
roasted peanuts, coarsely chopped
1/3 cup lime juice
1 tablespoon sriracha
1 tablespoon sugar
2 tablespoons tamari
2 tablespoons sesame oil
rice wine vinegar, to taste
Combine all salad ingredients and all dressing ingredients then toss together.
